White Chocolate – Raspberry Pie

I had two really busy weeks and didn’t have 5 minutes to go out and check up on the yard. When I finally went out there Friday morning it was madness. All kinds of weeds and tall grass. There were flowers tangled everywhere. Some of my garden stuff had bolted. The peas were finished.

I picked about 2 pounds of raspberries and there was at least another pound that was overripe and no good. Raspberries are a part-time job.

But I finally had the time and the berries to do my first invented pie.

Ingredients:

Your favorite 2 crust pie dough.

5 cups raspberries
3/4 to 1 cup sugar
1 T orange zest
1 T lemon zest
2 tsp. lemon juice
8 oz. white chocolate chips (I suspect a dark chocolate would work great, too. I’m going to try that next.)

Combine everything except the white chocolate chips together. Don’t skip the citrus zest, that’s what makes the flavor extraordinary. I was worried that the raspberries would be tart and I used the full cup of sugar. The white chocolate provides plenty of sweetness. Next time I would use less sugar.

I baked the bottom crust for about 10 minutes at 400 degrees and then spread the white chocolate chips in an even layer. Initially I thought I was going to let them melt a bit and try to spread the melted chocolate but I ditched that step.

I kept forgetting that I was documenting my baking process so there aren’t many photos.

Gently scrape your raspberry mix into your pie plate and cover with top crust. This makes a very juicy pie so you’d be wise to set the pie plate on a cookie sheet before putting into oven.

Bake at 400 for 20-25 minutes then reduce heat to 350 and bake another 30-40. If you’re not lazy you might brush a little milk on the top crust before baking to help it brown. I sometimes use foil on the edges of my pie but I didn’t this time and had no problems. Use your judgment.

Those white-bits don’t look especially pretty but the pie is delicious.

Week #5 Beg-A-Thon Update

Another busy day.

Searching For Bigfoot

I went on my favorite weekend excursion: looking for Bigfoot. Not sure what I’m going to do when I find him.

Really we did a quick lap through Oregon. We went to Bend for a night to visit relatives and made a quick trip to the High Desert Museum which was awesome. They have Indian and pioneer exhibits AND animals and environmental exhibits. There was an indoor exhibit with turtles and lizards in a faux westerny setting with train tracks.

One of the turtles tried to crawl from between the train tracks and he couldn’t get his big boxy self over one of the rails. He stood on his back legs and strained while his front legs windmilled around trying to push over. It was harrowing to watch. I thought we’d have to cancel the rest of the weekend so I could stand there until he made it over. He had his scrawny neck pushed out so far I though they might have to examine him for neck strain later. Finally I had to stop watching because I was getting neck strain standing in front of the glass trying to show him (or her, whatever, it’s so hard to tell with turtles) what to do.

Before we left we went back to check and he was doddering around another part of the exhibit. “Whew,” I said. “Now I can relax. Let’s go to the gift shop.”

Awesome gift shop. We almost got Aunt Janet a t-shirt that said, “Endangered Feces” and had drawings of different kinds of scat.

Also in Bend I had an Ocean Roll which is like a cinnamon roll only 1000 times better. It’s a flakey pastry roll with salt, sugar and cardamom. After every bite I said, “This is the best roll I’ve ever had.” I actually didn’t realize it was cardamom and kept saying it had a magical flavor that stayed in my mouth so that I kept saying, “Ocean Roll” long after we left Bend. When I got home I did a little poking around and found someone who adapted a recipe after trying the same roll. I’ll post when I try the recipe.

Meanwhile, at lunch we had a brisket sandwich that was like a rodeo in your mouth.. That was the end of the Ocean Roll but mmmm, brisket.

Eventually we ended up in Grants Pass, Oregon where I met my family and we did lots more eating and took a jetboat excursion on the Rogue River which was amazing. Bald eagles! Osprey! Lots of water soaking me because no one warned me I was sitting in the dunk seat.

I took a waterproof camera on the jetboat but I had to be all old timey and drop it off for processing and I haven’t had a chance to go pick it up. More photos to come.

One more story from the weekend: the motel in Bend had a loud mini-fridge and since I’ve been having trouble sleeping lately, I decided to just unplug the dang thing so it wouldn’t disturb my sleep. I woke up at 3AM to DRIP DRIP DRIP. At first I thought it was raining but it sounded like it was inside. Then I realized CRAP! And while muttering, “I am so stupid,” under my breath I jumped up and had to move all our stuff near the fridge and grab a towel and clean up because the fridge was defrosting. Or defrosted, I should say, and got some clothes and papers wet. I remember thinking when I unplugged it that there was probably a good reason why I shouldn’t but I couldn’t possibly be the first person to do that.

Well, it was all nice and defrosted when we left in the morning.

WEEK #4 Beg-A-Thon Update

These ladies thought it was weird that I took a photo of the official crunch of the Portland Timbers. Do they not understand obsessive documentation?

Very quick update as I am so busy I am moving at the speed of light. You can’t even see me right now. So maybe faster than the speed of light? Whatever, you science nerd pedants.

I am going to be taking a nice long computer free weekend and going to do some fun things so I have been cramming to get my Write-A-Thon goals completed.

Club Seats

Stop me if you heard this one: I was going to write a good post but instead I only have time for this really quick single-buttocked version. Plus I think only 2 of my loyal readers care about this stuff.

Timbers ticket partner and I talked about possibly upgrading to the club seats. The section is sold out but we could get on the waiting list.

First we wanted to sit in those seats for a game to see what it was like. Last week the Timbers played an exhibition game with Club America which is a hugely popular team that plays in Mexico City.

This game was outside our regular season tickets so we bought club seats.

They were nice seats. They were closer to the field than the ones we have and the seats are roomier. They have free food. These were the choices: hot dogs, Cracker Jack, Red Ropes, peanuts. Maybe something else I’m forgetting. Of course, FREE! After our pre-game pizza we ate that crap. I said, “I’m not sure this is such a great idea if we’re just gorging on junk.”

They were good seats but not twice the money good seats.

We are looking forward to getting back to Section 117 for today’s big game against Seattle. #RCTID

Attack of the Peas

If you’re looking at your current pea crop and sad that it isn’t frightening you with its productivity, let me tell you about the seeds I used: Veseys. I can’t remember which one I bought but they all look good. There were so many seeds I split them with co-worker and he’s been harvesting crates of peas, too.

Poor Parking

Look how this dipwit parked in front my house. No, this person was not visiting me.

I think my annoyance was out of proportion with the seriousness of the crime. It’s not like I couldn’t pull into my driveway.

But there was tons and tons of curb space available that did not partially block my driveway and the car was there for several hours. It had a big laminated sign taped to the driver’s side door that was one of those long affirmations about success and confidence that suggest to me, the driver was probably unstable.

I was irritated enough that I thought about knocking on neighbors’ doors to ask if that was their visitor and could they please move to a better spot. But then *I* would be that crazy neighbor having a snit fit when the car wasn’t hurting anyone and I’d look like an ass to the neighbor and the guest and even if they moved the car it wouldn’t be satisfying.

Then I thought about writing a note but I didn’t want to end up on passiveaggressivenotes.com. But then I thought I could take a photo and turn myself in to passiveagressivenotes.com because *that* would be satisfying.

While I was exercising I was trying to compose the perfect note with just the right mix of batshit insanity and goofy grammar. Could I work in an unnecessary apostrophe s? What color Sharpie would best get my point across?

Sadly, the car was gone before I could come up with something good.

Berries!

This was yesterday’s pickings. This is about twice what I picked on Friday. Tons more out there. The raspberries like to hide. Every time I looked back at the part I just picked I’d see another handful.

The first post-4th of July summer nice day commute was only 6 minutes short of my all time record of 82 minutes. (11 miles). This is not a record I’m seeking to break.
